
It’s very hard to get a window with Nick Nairn but Gail from Leith’s at the EICC managed to pin him down and we had a very successful conference call with him and Leith’s own chef, Iain McLean, about the menu for the ball.
It’s early stages but we have a plan. The idea is to serve good quality Scottish food with just a nod to Malawi and Zambia which are the two countries where 500 miles operates. For example, we are thinking of a starter of fish cakes made with Tilapia – which is a white fish indigenous to Malawi and Zambia. We just have to find a sustainable source. For the main course the hint of Africa is likely to be an African spice rub and we’ll use African cocoa in the pudding.
We will have a tasting at some point over the summer and finalise the menu.
Nick said he will do a mile in the 500 mile Challenge. My idea of tossing a pancake was rejected – he has a far better idea than that!
